Ravid, holding a Ph.D. in Plant Sciences and a B.S.c. in Nutritional Sciences, serves as the CEO. During her studies, she specialized in secondary metabolites and metabolic engineering in plants.


Dr. Daria Feldman, with a Ph.D. in Microbiology focusing on fungal molecular biology, is Kinoko Tech's CTO. With over ten years of experience, her expertise lies at the intersection of biotechnology and food science.


Hadar Shohat, the company’s COO, holds a B.S.c. in Food Technology and thirteen years of experience in various managerial positions in the IDF. During her military service and reserved duty, Shohat served as a high-ranking officer in the Israeli Air Force.

Its prime location is near the Hebrew University Faculty of Agricultural, Food, and Environmental Sciences; Kinoko Tech's headquarters facilitates collaboration with university scholars and benefits from ongoing research.

Additionally, the company operates its first pilot factory in Ashdod.



Creating The Optimal Superfood

Kinoko Tech utilizes mycelium, the fungal threads resembling mushroom roots, to produce high-protein food. Through a patented method, the company utilizes lentils and other legumes as a nutrition source for the mycelium, which matures into the desired shape within just four days.


The resulting product, Kinoko Tech, is a versatile ingredient for various dishes, including burgers, sausages, meatballs, kebabs, and patties. Kinoko Tech's mycelium-lentil combination boasts a higher protein content than ground beef or tofu.

Additionally, in August 2020, Kinoko Tech received a grant of $1.05M from the Israel Innovation Authority רשות החדשנות, further validating its potential for pioneering advancements in the food tech industry.
